We suggest an easy and quick homemade mayonnaise recipe made with Horio Koroneiki variety olive oil that will perfectly match any recipe with chicken, salad, cold pasta salads, potato salad, tuna salad, french fries and many more!
Keep a jar or an appropriate airtight container handy in order to transfer and store mayonnaise in the refrigerator, or use it in a recipe right away – mayonnaise will be ready in five minutes!
For better results, leave all ingredients at room temperature for a while.
The recipe makes about 1 cup of mayonnaise.
Ingredients
- 1 fresh large egg
- 1 cup Horio Koroneiki variety olive oil
- 4 tsp fresh lemon juice (plus more if we wish, in the end)
- 1 tsp dijon mustard
- 1/4 tsp kosher salt
- 1/4 tsp freshly grounded white or black pepper (black gives darker color to the mayonnaise)
Directions
- In a blender mix egg, lemon juice, mustard, salt and pepper, until combined.
- With the blender still running, add Horio Classic olive oil really slowly, in a steady thin stream, until mayonnaise becomes thick and smooth.
- Taste and add some drops of lemon juice if you prefer it sourer.
- Store in an airtight vase or container for 5-7 days.
