Lay a greaseproof paper in a baking tray.
In a bowl, mix the eggs and the milk, add the bacon with its broths, 2/3 of the quantity of Horio graviera Sweet, Mature or Long Maturation cheese, salt and pepper and stir.
Pour the mixture in a tray, sprinkle with the rest of Horio graviera cheese and bake for 30—35 minutes, until it turns golden.
