Stir flour, baking powder, cinnamon and salt in a bowl
Beat the eggs in a mixer at high speed
Using a spatula “push” the egg mixture into the center of the bowl and slowly add the flour/baking powder/cinnamon/salt mixture into the bowl, beating it with the mixer at a low speed
Stop the mixer and add the rum, raisins and walnuts and mix well using a spatula
Sprinkle flour into the muffin pan and using a spoon, add the mixture to each individual space (a little bit over halfway)
Bake in a preheated oven at 180° C for 20 minutes
Take them out of the oven and let them cool off, then flip them over a grill and allow the muffins to cool off completely
200 gr brown sugar with molasses3 pureed bananas200 gr Horio Soft with Cow Butter, melted, at room temperature2 eggs300 gr soft flour15 gr baking powder5 gr powdered cinnamon3 gr salt50 ml black rum50 gr black raisins80 gr chopped walnuts(Horio Soft with Cow Butter and flour are needed to prepare the baking pan)
