INGREDIENTS 12 large peeled shrimp, tails on 2 tbsp lemon juice (1+1) ¼ tsp salt 1 tbsp Horio Koroneiki Variery olive oil 1 tbsp finely chopped dill 5 thinly sliced onions 1 small spicy deseeded pepper, crushed ½ cup white wine ½ cup grated Horio feta cheese Fresh pepper | | DIRECTIONS- Put shrimp in a bowl, drizzle with 1 tbsp lemon juice and season with some salt.
- Heat Horio Koroneiki Variery olive oil in a grilling pan over medium heat.
- Add dill, onion and spicy pepper and brown for 3-5 minutes.
- Add wine and stir for 1 minute.
- Place shrimp over onion, cover with the lid and cook for 3-4 minutes until opaque.
- Remove grilling pan from heat and transfer shrimp in a plate.
- Put 1 tbsp lemon juice, Horio feta cheese and pepper in pan and stir until feta melts, for 1 minute.
- Serve shrimp on top of cheese mixture.
