Yellow risotto with saffron and grated cheese

Risotto is one of our favorite recipes, especially when made with Horio graviera cheese and an amazing ingredient such as saffron.

DIRECTIONS

  1. Heat olive oil in a pot and saute onion for 1 minute.
  2. Add rice and saute for 2 minutes.
  3. Add chicken stock, saffron, carrot, salt and pepper and cook until thick.
  4. Remove from heat and combine with butter, graviera and lemon juice.
  5. Mix well and serve.

    3 espresso cups glutinous rice 1 small carrot, coarsely grated 10 espresso cups chicken stock ½ dry onion, finely chopped 2 tbsp Horio organic olive oil 1 tsp Horio Soft unsalted with cow butter 15-18 saffron fibers 1 tbsp Horio Mature graviera, grated 1 tsp lemon juice salt-pepper
