Octopus stew

A traditional greek seafood recipe! Stewed octopus with ripe juicy tomatoes, garlic, rosemary and bay. Some Horio Koroneiki variety will add to its flavor!

DIRECTIONS

  1. In case the octopus is dry, soak it in water from the evening before in order to soften.
  2. Cut it into the length of 1-2 fingers and rinse it with water.
  3. Place in a pot along with all other ingredients, i.e. olive oil, vinegar, onions, bay leaves, rosemary, and the crushed tomatoes or the tomato paste.
  4. Add salt and pepper, cover the pot and allow to simmer until its sauce reduces as much as possible

    1.300 gr. octopus 1 kilo small onions 1 ½ cup of Horio Koroneiki variety ½ cup TOP red vinegar One garlic clove 2-3 bay leafs 1 rosemary sprig 1 cup of water 640 gr. Horio Crushed Tomatoes or 1 tablespoon of Horio Tomato paste salt and pepper
