  1. Clean the squash and cut into small pieces, chop the onion and grate the tomatoes.
  2. Pour some water in a pot, Horio Koroneiki variety olive oil, the squash, the onion, the crushed tomatoes, and the raisins, and boil for about 20 minutes.
  3. Add rice, salt, and pepper and boil for 10 more minutes.
